Ingredients List

  1. 4 Eastern Rock Lobsters (halved lengthways)
  2. Fresh lemon wedges, for serving
  3. 200g unsalted butter, melted
  4. 3 garlic cloves, minced
  5. Juice of 2 lemons
  6. 2 tablespoons fresh chives, finely chopped
  7. Salt & pepper, to taste

Steps

  1. Using a sharp knife, remove head from each rock lobster. Cut tail in half lengthways. Remove intestine.
  2. Melt butter in a small saucepan on low. Add garlic and simmer for 1 min. Remove from heat, add lemon juice and chives.
  3. Serve rock lobster drizzled with garlic butter and lemon wedges.
