Ingredients List

  1. 4 Atlantic salmon fillets
  2. 1 bunch asparagus, trimmed
  3. 2 shallots, sliced
  4. 1 red capsicum (bell pepper), sliced
  5. 2 tablespoons olive oil (for vegetables)
  6. 2 tablespoons miso paste
  7. 2 tablespoons mirin
  8. 1 tablespoon sweet chili sauce
  9. 2 tablespoons soy sauce
  10. Juice of 1 lime
  11. Sesame seeds, for garnish
  12. Fresh coriander leaves, for garnish
  13. Brown rice or noodles, for serving (optional)
  14. Lime wedges, for serving

Steps

  1. To make the marinade, combine the miso, mirin, sweet chilli, soy sauce, and lime juice in a jar and whisk with a fork to combine
  2. Preheat oven to 200C/180C fan forced. Grease a large oven tray. Arrange the asparagus, shallots, and capsicum on the prepared tray. Spray vegetables with oil.
  3. Place the salmon fillets on top of the vegetables and brush the tops and sides with the marinade. Bake for 15 minutes or until just cooked. Sprinkle with sesame seeds and top with coriander leaves. Serve with brown rice and lime wedges.
