About This Recipe

Easy Asian Salmon Tray Bake is a quick and flavorful dish that’s perfect for busy weeknights or a healthy, gourmet meal. Fresh Atlantic salmon fillets are marinated in a savory blend of soy sauce, ginger, garlic,
and a hint of honey, then baked with vibrant vegetables until tender and delicious. This one-pan meal offers a harmonious balance of flavors and textures, making it both nutritious and satisfying. Serve with steamed
rice or noodles for a complete meal that's as easy to prepare as it is delicious!

Ingredients

  1. 4 Atlantic salmon fillets
  2. 1 bunch asparagus, trimmed
  3. 2 shallots, sliced
  4. 1 red capsicum (bell pepper), sliced
  5. 2 tablespoons olive oil (for vegetables)
  6. 2 tablespoons miso paste
  7. 2 tablespoons mirin
  8. 1 tablespoon sweet chili sauce
  9. 2 tablespoons soy sauce
  10. Juice of 1 lime
  11. Sesame seeds, for garnish
  12. Fresh coriander leaves, for garnish
  13. Brown rice or noodles, for serving (optional)
  14. Lime wedges, for serving

Method

  1. To make the marinade, combine the miso, mirin, sweet chilli, soy sauce, and lime juice in a jar and whisk with a fork to combine
  2. Preheat oven to 200C/180C fan forced. Grease a large oven tray. Arrange the asparagus, shallots, and capsicum on the prepared tray. Spray vegetables with oil.
  3. Place the salmon fillets on top of the vegetables and brush the tops and sides with the marinade. Bake for 15 minutes or until just cooked. Sprinkle with sesame seeds and top with coriander leaves. Serve with brown rice and lime wedges.

Chef's Tip

Atlantic salmon is best when it’s just cooked through and still slightly glossy in the centre. Roasting the salmon over the vegetables allows the juices and marinade to soak into the tray, creating extra depth of flavour without extra effort. Fresh salmon pairs beautifully with Asian-style ingredients like miso, soy, and lime because they enhance the richness while keeping the dish light, balanced, and vibrant.
