These Australian Sardine Pasta with Garlic, Chilli & Lemon Breadcrumbs combine fresh wild-caught sardine fillets with garlic, chilli and olive oil for a simple, flavour-packed seafood pasta. The sardines are gently cooked and tossed through the pasta, then finished with crisp lemon breadcrumbs and fresh parsley for extra texture and brightness. Ready in around 30 minutes, this dish makes an easy weeknight dinner while keeping the rich flavour of the Australian sardines at the centre of the meal.

Ingredients

  1. 400g spaghetti or linguine
  2. 500g fresh Australian sardine fillets, butterflied
  3. 3 tbsp olive oil
  4. 3 garlic cloves, thinly sliced
  5. 1 red chilli, finely sliced
  6. ¾ cup fresh breadcrumbs
  7. 1 lemon, zested and juiced
  8. ¼ cup fresh flat-leaf parsley, roughly chopped
  9. ½ tsp sea salt
  10. Freshly ground black pepper
  11. ½ cup reserved pasta water

Method

  1. Bring a large pot of salted water to the boil and cook the spaghetti or linguine according to the packet instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the breadcrumbs and cook for 2-3 minutes, stirring regularly, until golden and crisp.
  3. Remove the breadcrumbs from the heat and stir through the lemon zest and half the parsley. Transfer to a bowl and set aside.
  4. Return the pan to medium heat and add the remaining olive oil. Add the garlic and chilli and cook for 1 minute until fragrant.
  5. Add the sardine fillets and cook gently for 2-3 minutes, turning once, until just cooked through. Break the fillets into large pieces with a wooden spoon.
  6. Add the drained pasta to the pan with the lemon juice and a splash of reserved pasta water. Toss gently until the pasta is coated and the sardines are evenly distributed, adding a little more pasta water if needed.
  7. Season with sea salt and freshly ground black pepper, then divide between serving bowls. Finish generously with the lemon breadcrumbs and remaining fresh parsley.

Chef's Tip

For the best texture, keep the sardine pieces fairly large when tossing them through the pasta so they remain visible and don't break down into the sauce. Toast the breadcrumbs until deeply golden, then add the lemon zest off the heat to keep its flavour fresh and bright. Finish the pasta with the breadcrumbs just before serving so they stay crisp.
