Ingredients

  1. 2 tbsp vegetable oil
  2. 1 small onion, finely chopped
  3. 2 garlic cloves, minced
  4. 2 eggs, lightly beaten
  5. 300 g cooked jasmine rice (preferably day-old)
  6. 200 g Vannamei prawns, peeled and deveined
  7. 2 tbsp soy sauce
  8. 1 tbsp oyster sauce
  9. 1 tsp sesame oil
  10. 2 spring onions, finely sliced
  11. Salt and pepper, to taste

Method

  1. Heat the vegetable oil in a large frying pan or wok over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened and fragrant.
  2. Push the onion and garlic to one side of the pan. Add the beaten eggs to the other side and scramble until fully cooked, then combine with the onions and garlic.
  3. Stir in the cooked rice, breaking up any clumps. Add the soy sauce, oyster sauce, and sesame oil, mixing everything together to coat the rice evenly.
  4. Add the cooked Vannamei prawns and peas to the rice, stirring to incorporate. Cook for an additional 2-3 minutes until everything is heated through.
  5. Season with black pepper and chili flakes (if using). Garnish with freshly sliced green onions and serve with lime wedges on the side.
