About This Recipe

Oysters Kilpatrick is a classic, savoury seafood dish featuring fresh Sydney Rock oysters topped with crispy bacon, a dash of Worcestershire sauce, and creamy parmesan. Perfectly grilled to golden perfection, this flavorful oyster recipe delivers a satisfying combination of smoky, tangy, and salty tastes. Ideal for special occasions or as a gourmet appetizer, Oysters Kilpatrick is a crowd-pleaser that highlights the natural briny flavors of premium oysters. Serve hot, garnished with freshly ground pepper and buttered bread for a delicious seafood experience.

Ingredients

  1. 6 fresh Sydney Rock oysters, in the half shell
  2. 2 slices bacon, chopped into small pieces
  3. 1 tablespoon Worcestershire sauce
  4. 1 tablespoon parmesan cheese, grated
  5. Freshly ground pepper (to taste)
  6. Butter (for spreading on bread, optional)
  7. Fresh bread (for serving, optional)

Method

  1. Remove oyster from shell, place 1 tablespoon of bacon in each oyster shell and return the oyster meat to the shell.
  2. Mix Worcestershire sauce with the cream and add a little of the cream mixture to each oyster. Sprinkle a small amount of parmesan cheese over each oyster.
  3. Place each oyster in the oven and cook until the bacon is crisp and the cheese has browned. Season and serve with slices of buttered bread.

Chef's Tip

Great Oysters Kilpatrick are all about contrast — smoky bacon, rich sauce, and bubbling parmesan against the fresh briny flavour of premium Sydney Rock oysters. Cook them hot and fast so the topping caramelises while the oysters stay juicy and tender underneath, just like you’d expect from a classic seafood restaurant entrée.
