Ingredients

  1. 3 tbsp red wine vinegar
  2. 6 tbsp olive oil
  3. 2 shallots, finely chopped
  4. 2 tbsp chives, finely chopped
  5. Salt and pepper, to taste
  6. 1 tbsp Dijon mustard
  7. 1 tbsp lime juice
  8. 1 egg yolk
  9. 150 ml neutral oil (like sunflower or grapeseed)
  10. 1 small gherkin, finely chopped
  11. 1 tbsp capers, chopped
  12. 1 tbsp parsley, finely chopped
  13. Salt and pepper, to taste
  14. 24 tiger prawns, peeled and deveined (about 4 per person )

Method

  1. In a small bowl, combine the vinegar with the oil while whisking continuously. Add the shallots and chives, then season with salt and pepper to taste. Set aside.
  2. In a small food processor, combine the mustard, 1 tablespoon of lime juice, egg yolk, and garlic. Blend until mixed. With the processor running, gradually drizzle in the oil until the mixture is fully emulsified. Transfer to a bowl and fold in the chopped chilli, coriander, and lime zest. Adjust seasoning with salt and pepper as needed.
  3. Spoon the sauces into two small bowls. Arrange crushed ice on a serving platter, sprinkling with salt. Place the prawns on top of the ice and serve alongside the dipping sauces.
