Ingredients

  1. 16 medium prawns, peeled and deveined
  2. 8 scallops, cleaned
  3. 1 ripe avocado, sliced
  4. 1 small mango, peeled and sliced
  5. 2 cups watercress or mixed greens
  6. 1 tablespoon olive oil
  7. 1 tablespoon sesame seeds
  8. 2 tablespoons lime juice
  9. 1 tablespoon rice vinegar
  10. 1 teaspoon honey
  11. 1 teaspoon sesame oil
  12. Salt and pepper, to taste

Method

  1. Place the sesame seeds in a large frying pan over a medium heat. Cook, stirring occasionally, for about 2 minutes or until golden. Remove and set aside.
  2. Divide the watercress, prawns, mango and avocado among serving dishes.
  3. Heat the olive oil in the frying pan over a high heat. Cook the scallops for about 1 minute each side or until golden and cooked through. Remove from the pan. Season the scallops with salt and pepper. Divide among the salads and drizzle with the lime juice and scatter over the sesame seeds.

Chef's Tip

Avocado, prawn, and scallop salad is all about freshness, texture, and balance. Sweet prawns and delicate scallops pair beautifully with creamy avocado and juicy mango, while crisp greens and citrus dressing keep the dish bright and refreshing. Quickly searing the scallops adds gentle caramelisation and warmth that contrasts perfectly with the cool salad ingredients, creating an elegant seafood dish that feels light yet luxurious.
