Ingredients

  1. 4 king salmon portions (fresh or smoked)
  2. 1 large leek (sliced)
  3. 2 medium potatoes (peeled and sliced)
  4. 6 large eggs
  5. 1/4 cup cream (optional for a richer texture)
  6. 2 tablespoons fresh dill (chopped)
  7. Olive oil spray (for cooking)
  8. Salt and pepper to taste

Method

  1. Preheat the grill on medium. Spray a 20cm (base measurement) ovenproof non-stick frying pan with olive oil spray. Place over medium heat. Add half the potato and cook for 1 minute on each side or until
    light golden and tender. Transfer to a plate and repeat with the remaining potato.
  2. Add the leek to the pan and cook, stirring, for 5 minutes or until softened. Transfer to a medium bowl.
  3. Coarsely chop half the dill sprigs. Spray the pan again with olive oil spray. Arrange the potato, leek, and salmon over the base of the pan. In a jug, whisk the eggs and chopped dill together, then season. Pour the egg mixture over the salmon mixture in the pan. Place
    the pan over medium-low heat and cook for 5 minutes or until the egg mixture is almost set.
  4. Cook under the grill for 5 minutes or until golden and cooked through.
  5. Set the frittata aside in the pan for 2 minutes. Cut into wedges and sprinkle with the remaining dill to serve.
