300g prawns, peeled and deveined
4 eggs
200g baby potatoes, halved
150g green beans, trimmed
100g cherry tomatoes, halved
1 small red onion, thinly sliced
100g mixed salad greens
8 black olives, pitted
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp Dijon mustard
Salt and pepper, to taste
Fresh parsley, to garnish (optional)
Steps
Boil the eggs in a pot of water for about 10 minutes until hard-boiled. Once done, peel and cut them in half. Set aside.
Boil the potatoes until tender, about 10-12 minutes. Drain, slice, and set aside to cool.
In a pot of boiling water, cook the prawn cutlets for 2-3 minutes or until they turn pink and opaque. Drain and set aside to cool. Once cooled, slice into smaller pieces if desired.
