Ingredients List

  1. 300g prawns, peeled and deveined
  2. 4 eggs
  3. 200g baby potatoes, halved
  4. 150g green beans, trimmed
  5. 100g cherry tomatoes, halved
  6. 1 small red onion, thinly sliced
  7. 100g mixed salad greens
  8. 8 black olives, pitted
  9. 2 tbsp olive oil
  10. 1 tbsp red wine vinegar
  11. 1 tsp Dijon mustard
  12. Salt and pepper, to taste
  13. Fresh parsley, to garnish (optional)

Steps

  1. Boil the eggs in a pot of water for about 10 minutes until hard-boiled. Once done, peel and cut them in half. Set aside.
  2. Boil the potatoes until tender, about 10-12 minutes. Drain, slice, and set aside to cool.
  3. In a pot of boiling water, cook the prawn cutlets for 2-3 minutes or until they turn pink and opaque. Drain and set aside to cool. Once cooled, slice into smaller pieces if desired.
  4. In a large bowl, combine the mixed greens, cucumber, red onion, cherry tomatoes, olives, and boiled potatoes.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
  6. Assemble the salad by arranging the prawn cutlets, boiled eggs, and fresh vegetables on top of the mixed greens.
  7. Drizzle the dressing over the salad and toss gently to combine. Garnish with fresh parsley.
