Ingredients List
- 600g fresh lobster meat (shelled, cooked, and cut into 3cm cubes)
- 2 celery stalks, finely diced
- ½ cup whole egg mayonnaise
- 2 tablespoons fresh lime juice
- ¼ teaspoon Tabasco sauce (adjust to taste)
- 4 hot dog buns
- 4 lettuce leaves (iceberg or your choice, for lining the buns)
- 2 tablespoons finely chopped chives
- Butter (for spreading on the buns)
Steps
- Cook lobster in a large saucepan of salted water (water must be very salty, like the sea). Boil for 6 minutes. Drain and cool in fridge.
- Meanwhile, combine celery, onion, mayonnaise, lime juice, and Tabasco in a medium bowl. Discard the lobster shell and cut the flesh into 3cm cubes. Add to the celery mixture and toss to combine. Check seasoning.
- Split buns and spread inside with butter. Fill with lettuce and lobster mixture. Sprinkle with chives.
