Ingredients List

  1. 300g silver fish (whole, cleaned, and heads removed)
  2. 1 tablespoon olive oil or butter
  3. 1 small onion (chopped)
  4. 4 large eggs
  5. 1 tablespoon milk
  6. Salt (to taste)
  7. Pepper (to taste)
  8. Grated cheese (optional, for topping)
  9. Fresh parsley (chopped, for garnish)

Steps

  1. Heat the olive oil or butter in a non-stick frying pan over medium heat.
  2. Add the chopped onion and cook for 2-3 minutes until softened and slightly golden.
  3. Add the silver fish to the pan and cook for 3-4 minutes, stirring occasionally, until the fish is cooked through and flakes easily.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  5. Pour the egg mixture into the pan, over the cooked fish and onions. Tilt the pan to spread the mixture evenly.
  6. Cook for 3-4 minutes until the omelette is mostly set. Optionally, sprinkle grated cheese and fresh parsley on top.
  7. Fold the omelette in half and serve immediately, garnished with extra parsley if desired.
