Ingredients List

  1. 4 eggs
  2. 100g Blue Swimmer Crab meat
  3. 1/2 avocado, diced
  4. 1 tablespoon finely chopped mint
  5. 1/2 small eschallot, finely sliced
  6. 1 teaspoon lime zest
  7. 1 tablespoon lime juice
  8. 1/2 teaspoon white sugar
  9. 1 teaspoon sesame oil
  10. Salt
  11. Black pepper
  12. Olive oil or butter, for cooking

Steps

  1. Prepare the salsa by combining avocado, mint, and eschallot in a bowl. Whisk together lime zest, lime juice, white sugar, and sesame oil, then drizzle over the mixture. Toss gently to combine.
  2. In a small jug, lightly beat the eggs with chives and brown sugar. Heat oil in a medium frying pan over medium-high heat. Pour in the egg mixture and, using a spatula, gently pull the edges toward the center to allow uncooked egg to flow to the edges. Cook for 2-3 minutes or until the base is set.
  3. Place the frying pan under a preheated grill and cook for 1-2 minutes until the omelette is puffed and fully set. Sprinkle Blue Swimmer Crab meat over one side of the omelette, then fold it in half. Cut into portions and transfer to plates. Top with salsa and serve with
    lime cheeks.
