200g vermicelli noodles, cooked and chopped
400g prawns, peeled, deveined, and finely chopped
1 medium carrot, julienned
1 cup shredded lettuce
½ cup fresh coriander leaves, chopped
½ cup fresh mint leaves, chopped
1 tbsp soy sauce
1 tbsp fish sauce
1 tsp sesame oil
Juice of 1 lime
20 rice paper sheets or spring roll wrappers
Vegetable oil, for frying
Dipping sauce of choice, to serve

In a bowl, combine the prawn meat (chopped into small pieces), cooked vermicelli noodles, fresh coriander, mint, shredded lettuce, and julienned carrots.
Add the soy sauce, fish sauce, sesame oil, and lime juice to the mixture. Stir well to combine all the ingredients. Taste and adjust seasoning if needed.
Prepare a shallow bowl of warm water for the rice paper wrappers. Dip each rice paper wrapper into the warm water for 5-10 seconds, until soft but not too mushy.
