Ingredients

  1. Fresh seafood mix (prawns, mussels, calamari) – approx. 600g total
  2. 300g fettuccine pasta
  3. 1 tbsp olive oil
  4. 1 small onion, finely sliced
  5. 2 cloves garlic, minced
  6. 400g can crushed tomatoes
  7. ¼ cup dry white wine (optional)
  8. 1 tsp dried oregano
  9. ½ tsp chilli flakes (optional)
  10. Salt and pepper, to taste
  11. 2 tbsp fresh parsley, chopped
  12. Lemon wedges, for serving

Method

  1. Cook the fettuccine in a large saucepan of boiling water according to the packet directions. Drain and return the pasta to the pan.
  2. Meanwhile, heat the oil in a large saucepan over medium heat. Add the sliced onion and cook for 5 minutes, or until soft. Stir in 1 tablespoon of dill and cook for an additional minute. Add the pasta sauce and 1/2 cup of water, bringing the mixture to a boil.Reduce the heat to low, then stir through the marinara mix and Tabasco sauce, simmering for 5 minutes until the seafood is cooked.
  3. Stir in the grated lemon rind and season to taste. Add the sauce to the fettuccine and gently toss to combine. Top with the remaining dill and serve with crusty bread.
