Ingredients

  1. 300 g cooked Vannamei prawns, peeled and deveined
  2. 1 large ripe mango, julienned
  3. 1/2 cucumber, julienned
  4. 1/2 small red onion, thinly sliced
  5. A handful of fresh mint leaves, chopped
  6. A handful of fresh coriander leaves, chopped
  7. Juice of 1 lime
  8. 1 tbsp fish sauce
  9. 1 tsp sugar
  10. 1 tbsp olive oil or sesame oil (optional)
  11. Salt and pepper, to taste

Method

  1. In a large bowl, combine the julienned mango, cucumber, and thinly sliced red onion.
  2. Add the cooked Vannamei prawns to the bowl, along with the chopped fresh mint and coriander.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad ingredients and gently toss to combine, making sure everything is coated evenly.
