Ingredients

  1. 600g banana prawns, peeled and deveined
  2. 1 tbsp olive oil
  3. 1 tbsp lemon juice
  4. 1 tsp smoked paprika
  5. Salt and pepper, to taste
  6. 1/2 cup whole egg mayonnaise
  7. 1 tbsp chopped fresh parsley
  8. 1 tbsp chopped fresh dill
  9. 1 tsp lemon zest
  10. 1 tsp lemon juice
  11. Extra lemon wedges, to serve

Method

  1. Preheat the barbecue or grill to medium-high heat. In a bowl, toss the banana prawns with olive oil, lemon juice, smoked paprika, salt, and pepper until evenly coated.
  2. Place the prawns on the grill and cook for 2-3 minutes on each side, or until they are pink and cooked through. Remove from heat and set aside.
  3. In a separate bowl, combine mayonnaise, fresh parsley, dill, chives, lemon zest, and minced garlic. Stir until well combined to make the herb mayo.
  4. Serve the barbecued prawns with a generous dollop of herb mayo on top. Garnish with extra herbs, if desired, and enjoy immediately.

Chef's Tip

For perfectly barbecued banana prawns, cook them over high heat for only a few minutes so they develop light char marks while staying juicy and tender inside. The smoky paprika and fresh lemon enhance the natural sweetness of the prawns, while the herb mayo adds richness and freshness without overpowering the seafood. Chill the herb mayo for a few minutes before serving to allow the flavours to develop, and serve the prawns immediately off the grill for the best texture and flavour.
