Ingredients

  1. 4 eggs
  2. 2 tbsp milk
  3. Salt & pepper, to taste
  4. 1 tsp unsalted butter
  5. 2 tbsp tobiko (flying fish roe)
  6. Chopped chives or spring onions, to garnish (optional)
  7. Toast or steamed rice, to serve (optional)

Method

  1. Crack the eggs into a bowl. Add milk, salt, and pepper. Whisk until the mixture is smooth and well combined.
  2. Heat a non-stick frying pan over medium heat and add the butter. Swirl the pan to coat it evenly as the butter melts.
  3. Pour the egg mixture into the pan, tilting to spread it out evenly. Cook undisturbed for 2-3 minutes or until the edges begin to set.
  4. Sprinkle the tobiko and sliced green onion evenly over the surface of the omelette.
  5. Using a spatula, gently fold one side of the omelette over the filling and cook for another 1-2 minutes, or until fully set.
  6. Slide the omelette onto a serving plate. Garnish with fresh herbs and serve immediately. Add soy sauce on the side, if desired.
