Ingredients

  1. 4 Barramundi fillets
  2. 1/4 cup soy sauce
  3. 2 tablespoons mirin
  4. 2 tablespoons sake (optional)
  5. 2 tablespoons honey
  6. 1 tablespoon miso paste
  7. 1 teaspoon fresh ginger, grated
  8. 200g soba noodles
  9. 1 bunch baby broccoli
  10. 1 bunch asparagus
  11. Olive oil for grilling
  12. 1 fresh chilli

Method

  1. In a saucepan over medium heat, combine the soy sauce, mirin, sake (if using), honey, and miso paste. Bring to a gentle simmer, stirring occasionally, for 2-3 minutes or until the sauce thickens slightly. Remove from heat and stir in the ginger. Let cool slightly.
    Transfer half the mixture to a large bowl. Add the barramundi and turn to coat. Cover and refrigerate for 15 minutes to marinate.
  2. Cook soba noodles in a large pot of boiling water for 2-3 minutes until tender. Drain and return to the pan. Add half of the remaining sauce mixture and toss to combine.
  3. Heat a grill to medium-high. Lightly brush the baby broccoli and asparagus with oil. Grill for 2-3 minutes, turning, until lightly charred. Transfer to a plate.
  4. Grill the marinated barramundi for 2-3 minutes on each side or until just cooked through. Transfer to a plate to rest.
  5. Divide the soba noodles, broccoli, and asparagus between bowls. Top with the grilled barramundi and drizzle with the remaining sauce. Garnish with sliced chilli if desired.
