These Grilled Australian Sardine Fillets with Tomato, Chilli & Herb Salsa are a fresh, vibrant way to enjoy wild-caught Australian sardines. The butterflied fillets are grilled until lightly charred and tender, then topped with a bright salsa of ripe tomato, fresh chilli, herbs and lemon. Ready in around 25 minutes, this recipe is ideal for a relaxed lunch, barbecue or easy dinner. Serve with crusty bread, a simple salad or grilled vegetables for a colourful seafood meal that keeps the rich flavour of the sardines at the centre of the plate.

Ingredients

  1. 500g fresh Australian sardine fillets, butterflied
  2. 2 tbsp olive oil
  3. 2 ripe tomatoes, finely diced
  4. 1 small red chilli, finely sliced
  5. ¼ small red onion, finely diced
  6. ¼ cup fresh flat-leaf parsley, roughly chopped
  7. 2 tbsp fresh mint leaves, roughly chopped
  8. 1 lemon, juiced
  9. ½ tsp sea salt
  10. Freshly ground black pepper
  11. Lemon wedges, to serve

Method

  1. Preheat a barbecue or grill pan over medium-high heat until hot.
  2. Pat the butterflied sardine fillets dry with paper towel, then brush lightly with 1 tablespoon of olive oil and season with sea salt and freshly ground black pepper.
  3. Combine the tomatoes, chilli, red onion, parsley and mint in a bowl. Add the lemon juice and remaining olive oil, then gently toss to combine.
  4. Place the sardine fillets on the hot grill skin-side down and cook for 2-3 minutes until lightly charred and the skin begins to crisp.
  5. Carefully turn the fillets and cook for a further 1-2 minutes, until just cooked through.
  6. Transfer the grilled sardines to a serving platter and spoon the tomato, chilli and herb salsa generously over the top.
  7. Finish with freshly ground black pepper and serve immediately with lemon wedges on the side.

Chef's Tip

For the best char and flavour, make sure the grill or barbecue is hot before adding the sardine fillets. Cook them skin-side down first and avoid moving them too much. Spoon the tomato, chilli and herb salsa over the sardines just before serving so it stays fresh and vibrant.
