Ingredients

  1. 4 ocean trout portions (about 150–180g each)
  2. 1 leek, trimmed and thinly sliced
  3. 2 medium carrots, julienned
  4. 2 tablespoons fresh tarragon, chopped
  5. Salt and pepper, to taste
  6. 1 tablespoon lemon juice
  7. 2 tablespoons dairy spread (or butter)
  8. 4 sheets non-stick baking paper (40cm diameter)
  9. Salad leaves, to serve

Method

  1. Preheat the oven to 200°C. In a large bowl, combine the leek, carrot, and tarragon. Season with salt and pepper. Cut four 40cm-diameter discs from non-stick baking paper.
  2. Place 1 trout portion on 1 half of each paper disc. Top the trout with the leek mixture and drizzle with lemon juice. Divide the dairy spread evenly among the fillings.
  3. Fold the discs in half to enclose the fillings. Fold the edges over to seal the parcels. Place the parcels on 2 baking trays.
  4. Bake in the preheated oven, swapping trays halfway through cooking, for 12 minutes or until the parcels puff up (the paper will fill with steam during cooking) and the trout is just cooked through.
    Place the parcels on serving plates, open them, and serve immediately with salad leaves.
