Ingredients

  1. 2 medium cucumbers, peeled and chopped
  2. 1/2 cup Greek yogurt
  3. 1 tablespoon fresh dill, chopped (plus extra for garnish
  4. 1 tablespoon lemon juice (plus lemon wedges for serving)
  5. 1/2 cup vegetable stock (or chicken stock)
  6. Salt and pepper to taste
  7. 2 teaspoons olive oil
  8. 6–8 scampi (depending on size)

Method

  1. In a blender or food processor, combine the chopped cucumbers, Greek yogurt, fresh dill, lemon juice, vegetable or chicken stock, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
