Ingredients

  1. 2 medium cucumbers, peeled and chopped
  2. 1/2 cup Greek yogurt
  3. 1 tablespoon fresh dill, chopped (plus extra for garnish
  4. 1 tablespoon lemon juice (plus lemon wedges for serving)
  5. 1/2 cup vegetable stock (or chicken stock)
  6. Salt and pepper to taste
  7. 2 teaspoons olive oil
  8. 6–8 scampi (depending on size)

Method

  1. In a blender or food processor, combine the chopped cucumbers, Greek yogurt, fresh dill, lemon juice, vegetable or chicken stock, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
  2. Transfer the soup to a bowl or pitcher, cover, and refrigerate for at least 1 hour, allowing it to chill and the flavours to meld.
  3. While the soup is chilling, heat olive oil in a skillet over medium-high heat. Add the scampi and cook for 1-2 minutes on each side, or until pink and cooked through. Remove from the pan and set aside to cool slightly.
