Ingredients List

  1. 6–8 scampi
  2. 2 teaspoons olive oil
  3. 2 tablespoons butter
  4. 3 cloves garlic, minced
  5. 1/4 cup white wine (optional)
  6. Salt and pepper to taste
  7. 1/4 teaspoon crushed red pepper flakes (optional)
  8. 1 tablespoon lemon juice
  9. 1 tablespoon fresh parsley, chopped
  10. Lemon wedges for serving

Steps

  1. Heat olive oil in a large skillet over medium-high heat. Add the scampi and cook for 2-3 minutes per side, or until they turn pink and are cooked through. Remove from the skillet and set aside.
  2. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. If using, pour in the white wine and allow it to simmer for 2-3 minutes, reducing slightly. Season the sauce with salt, pepper, and crushed red pepper flakes (if using).
  4. Return the cooked scampi to the skillet and toss them in the garlic butter sauce for 2-3 minutes until well coated. Add the lemon juice and fresh parsley, stirring to combine.
