Ingredients List

  1. 1.5 kg mussels, cleaned and debearded
  2. 2 tbsp olive oil
  3. 4 cloves garlic, minced
  4. 1 small onion, finely chopped
  5. 200 ml white wine (or seafood stock)
  6. 250 ml thickened cream
  7. Salt and freshly cracked black pepper, to taste
  8. 2 tbsp fresh parsley, chopped
  9. Lemon wedges, to serve
  10. 800g – 1 kg potatoes, peeled and cut into chips
  11. 2–3 tbsp vegetable oil (for roasting or frying)

Steps

  1. Clean and debeard the mussels, discarding any that remain open after a gentle tap.
  2. Heat olive oil in a large, deep pan over medium heat. Add the garlic and onion, cooking until softened and fragrant.
  3. Pour in the white wine and bring to a simmer. Add the mussels, cover with a lid, and steam for 5 minutes, shaking the pan occasionally, until the mussels open. Discard any that remain closed.
  4. Remove the mussels from the pan and set aside, keeping them warm. Leave the liquid in the pan.
  5. Add butter and cream to the pan, stirring well to combine with the cooking liquid. Simmer for 2-3 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.
  6. Return the mussels to the pan, tossing gently to coat them in the creamy garlic sauce.
  7. Serve the mussels hot, garnished with fresh parsley, alongside crispy cooked chips.
