Ingredients

  1. 2 tbsp olive oil or ghee
  2. 1 medium onion, finely chopped
  3. 3 garlic cloves, minced
  4. 1-inch piece of ginger, grated
  5. 2 green chilies, finely chopped (adjust to taste)
  6. 2 tsp ground coriander
  7. 1 tsp ground cumin
  8. 1/2 tsp turmeric
  9. 1 tsp chili powder (adjust to taste)
  10. 2 tomatoes, chopped
  11. 200 ml coconut milk
  12. 300 g Vannamei prawns, peeled and deveined
  13. Salt, to taste
  14. Fresh coriander leaves, chopped (for garnish)

Method

  1. Heat olive oil or ghee in a large pan over medium heat. Add the chopped onion, garlic, and ginger, and sauté until softened, about 3-4 minutes.
  2. Add the chopped green chilies and tomatoes to the pan, and cook for another 5 minutes until the tomatoes break down and become soft.
  3. Stir in the curry powder, turmeric, cumin powder, and garam masala. Cook for 1-2 minutes to allow the spices to release their flavours.
  4. Pour in the coconut milk and simmer the curry base for 5 minutes, stirring occasionally. Add salt to taste.
  5. Once the curry base is ready, add the cooked Vannamei prawns to the pan. Stir gently to coat the prawns in the curry sauce and cook for another 2-3 minutes to heat the prawns through.
  6. Finish by stirring in lemon juice and garnish with freshly chopped coriander.
  7. Serve the Spicy Vannamei Prawn Curry with rice or naan bread for a delicious, flavorful meal!
