Ingredients

  1. 400g Paradise Prawns, peeled and deveined
  2. 2 tbsp olive oil
  3. 2 garlic cloves, minced
  4. 1 red chilli, chopped
  5. Juice and zest of 2 limes
  6. 1 tbsp honey
  7. 1 tbsp soy sauce
  8. 1 tbsp fish sauce
  9. Fresh coriander, chopped (for garnish)
  10. Steamed rice or crusty bread, to serve
  11. Salt and pepper, to taste

Method

  1. Peel and devein the Paradise Prawns, then rinse under cold water and pat dry with a paper towel. Set aside.
  2. In a small bowl, whisk together the lime juice, lime zest, honey, soy sauce, and fish sauce. Set this sauce aside.
  3. Heat the olive oil in a large skillet or wok over medium heat. Add the minced garlic and chopped red chilli, and sauté for 1-2 minutes until fragrant.
  4. Add the prawns to the skillet, cooking for 2-3 minutes on each side or until they turn pink and are just cooked through. Remove the prawns and set aside.
  5. Pour the prepared sauce into the same skillet. Bring to a simmer and cook for 2-3 minutes, allowing the flavours to meld and the sauce to slightly thicken.
  6. Return the prawns to the skillet, tossing them in the sauce to coat evenly. Cook for another 1-2 minutes to warm through.
  7. Season with salt and pepper to taste. Remove from heat and garnish with fresh chopped coriander.
  8. Serve hot over steamed rice or with crusty bread to soak up the delicious sauce.
