Ingredients List
- 4 x 180g barramundi fillets, skin on
- 2 tablespoons olive oil
- 1 leek, white part only, thinly sliced
- 1 small fennel bulb, thinly sliced
- 2 garlic cloves, finely chopped
- 1 small red chilli, finely sliced
- 200ml dry white wine
- 400g cherry tomatoes, halved
- 1 cup fish stock
- 1 tablespoon capers, rinsed
- 8 black olives, pitted
- 1 tablespoon flat-leaf parsley, chopped
- 1 tablespoon basil leaves, torn
- Salt, to taste
- Freshly ground black pepper, to taste
Steps
- Heat the olive oil in a large frying pan over medium heat. Add the leek and fennel, and cook, stirring for about 5 minutes, or until softened. Add the garlic and chilli, and cook for an additional minute, or until aromatic.
- Pour in the dry white wine and bring to a simmer. Let it simmer uncovered for 1-2 minutes. Add the cherry tomatoes and olives, and continue to simmer uncovered for another 2 minutes.
- Add the barramundi, stock, and 200ml of water to the pan. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 8-10 minutes, or until the fish is cooked through. Season to taste and sprinkle with chopped parsley before serving with toasted wholegrain sourdough.
