  1. 24 fresh oysters in the half shell
  2. 2 green shallots, thinly sliced lengthwise
  3. 2 tablespoons mirin
  4. 2 tablespoons light soy sauce
  5. 1 teaspoon caster sugar

  7. Pinch of ground white pepper
  8. Pinch of salt
