Ingredients

  1. 300g fresh tuna poke cubes
  2. 2 cups cooked and cooled sushi rice
  3. 1 cup fresh pineapple, cut into bite-sized pieces
  4. 1 Lebanese cucumber, thinly sliced
  5. 1 fresh red chilli, thinly sliced
  6. 2 spring onions, thinly sliced
  7. 3 tablespoons ponzu sauce
  8. 1 teaspoon sesame oil
  9. 1 teaspoon toasted sesame seeds
  10. 1 teaspoon black sesame seeds
  11. 1 sheet nori, finely shredded

Method

  1. Cook the sushi rice according to packet instructions, then allow it to cool completely before assembling the poke bowls.
  2. In a small bowl, combine the ponzu sauce and sesame oil, stirring until well combined.
  3. Place the tuna poke cubes in a bowl and gently toss with the ponzu dressing until lightly coated.
  4. Divide the cooled sushi rice between two serving bowls.
