Ingredients

  1. 200g cooked tiger prawns, peeled and deveined
  2. 1 baby gem lettuce, chopped
  3. 1 green shallot, finely sliced
  4. ½ avocado, diced2 tablespoons mayonnaise
  5. 1 teaspoon Dijon mustard
  6. 1 teaspoon hot sauce (or to taste)
  7. 1 teaspoon lemon juice
  8. Salt and pepper, to taste
  9. 2 soft bread rolls (brioche or hotdog style)
  10. Butter, for toasting
  11. Fresh herbs or chilli flakes, for garnish (optional)

Method

  1. Peel and devein the cooked tiger prawns, then set aside.
  2. Place the baby gem lettuce, green shallot, and avocado on a large chopping board. Use a large knife to chop the ingredients coarsely. Add the prawns and continue to chop until the mixture is coarsely chopped.
  3. Drizzle the prawn mixture with Japanese Kewpie mayonnaise, sriracha chilli sauce, and lemon juice. Season with salt and freshly cracked black pepper, then use tongs to combine.
  4. Fill the brioche hot dog rolls with the prawn mixture and serve immediately.
