Ingredients List

  1. 200g fresh whitebait (cleaned)
  2. 1 tablespoon plain flour
  3. 2 tablespoons vegetable oil (for frying)
  4. 1/2 cup mayonnaise
  5. 1 tablespoon fresh dill (chopped)
  6. 1 teaspoon lemon juice
  7. Salt (to taste)
  8. Pepper (to taste)
  9. Lemon slices (for garnish, optional)

Steps

  1. Start by heating a small amount of oil in a frying pan over medium heat.
  2. Lightly dust the whitebait with flour, shaking off any excess, and add to the hot oil. Fry until the whitebait is golden and crispy, about 2-3 minutes. Remove from the pan and drain on paper towels to remove excess oil.
