Ingredients

  1. 1.2 kg kingfish sashimi, sliced into portions
  2. 5 tablespoons white miso paste
  3. 5 tablespoons water
  4. 4 tablespoons soy sauce
  5. 2 tablespoons mirin
  6. 1 tablespoon grated fresh ginger
  7. 2 teaspoons sesame oil
  8. 1 tablespoon vegetable oil (for cooking)
  9. Lime wedges, to serve (optional)
  10. Steamed rice or vegetables, to serve (optional)

Method

  1. Place the kingfish slices in a large, shallow glass or ceramic dish. In a small bowl, mix the miso paste and water until smooth. Spread the miso mixture evenly over the fish. Cover with plastic wrap and refrigerate for 1 hour to allow flavors to infuse.
  2. Slice the nori sheets into ten 2cm-wide strips for wrapping later.
  3. Preheat the grill to high heat and line a baking tray with foil. Remove the fish from the marinade, place on the prepared tray, and discard the leftover marinade. Grill the fish, turning occasionally, for 4-6 minutes or until just cooked through.
  4. Slice the tofu crosswise into ten 1.5cm-thick pieces. Place each grilled fish slice on a tofu piece and secure by wrapping with a strip of nori.

Chef's Tip

Miso-marinated kingfish is all about deep umami flavour balanced with the clean richness of the fish. White miso, soy, mirin, and ginger create a savoury, slightly sweet marinade that enhances the buttery texture of kingfish without overpowering it. Cooking the fish quickly over high heat caramelises the marinade beautifully while keeping the centre tender and moist, creating a simple but elegant Japanese-inspired seafood dish.
