Ingredients

  1. 4 Blue Eye Cod portions
  2. 1 tablespoon olive oil
  3. Salt and pepper, to taste
  4. 1 tablespoon butter
  5. 2 cloves garlic, minced
  6. 1 tablespoon fresh oregano, chopped
  7. Juice of 1 lemon
  8. Lemon wedges, for serving
  9. Simple salad, for serving

Method

  1. Heat the oil in a non-stick frying pan over medium-high heat. Sprinkle the fish with salt and pepper. Add the fish to the pan. Cook for 2-3 minutes on each side or until just cooked through. Remove from the pan, cover with foil, and set aside to keep warm.
  2. Wipe the frying pan with paper towel and return to medium heat. Add the butter and cook for 1-2 minutes or until it starts to turn golden brown. Add the garlic and oregano. Cook for another 30 seconds, then remove from the heat. Add the lemon juice and stir to combine.
  3. Divide the fish between serving plates and drizzle with the lemon and oregano sauce. Serve with a wedge of lemon and a simple salad.

Chef's Tip

Blue Eye Cod has a naturally delicate, buttery texture that shines with simple ingredients like lemon, garlic, and fresh oregano. Cook the fish gently over medium-high heat so it stays moist and flaky in the center while developing a light golden crust. The warm lemon butter sauce adds brightness and richness without overpowering the clean flavour of the premium seafood.
