Fresh oysters should smell clean and ocean-like, never fishy. Live oysters should be tightly closed or close when tapped. At Pearl Seafoods, our oysters are carefully handled and packed chilled to maintain freshness during Sydney delivery.

Sydney Rock oysters are smaller with a deep shell and have a rich, complex flavour. Pacific oysters are larger with a smoother shell and offer a lighter, creamier taste. Both varieties are popular choices for fresh seafood platters.

Live oysters should be stored in the refrigerator at around 0–4°C. Keep them in a breathable container covered with a damp cloth and place them cup-side down to retain their natural juices. Do not store live oysters in fresh water or sealed containers.
