Ingredients

  1. 8 Moreton Bay bugs, halved (pre-cooked)
  2. 2 tablespoons olive oil
  3. Salt and freshly ground pepper (to taste)
  4. 100g butter, softened
  5. 2 tablespoons Sriracha sauce
  6. 2 cloves garlic, minced
  7. Juice of 1 lemon
  8. 2 tablespoons fresh parsley, chopped

Method

  1. To prepare the Sriracha butter, combine the softened butter, Sriracha, garlic, lemon juice, and chopped parsley in a small bowl. Mix until well blended.
  2. Lightly brush the Moreton Bay bugs with olive oil, and season with salt and pepper. Generously spread the Sriracha butter over each bug, ensuring they are fully coated.
  3. Preheat a grill pan over medium-high heat and place the bugs flesh-side down for 2-3 minutes. Since they are already pre-cooked, grill just until slightly charred.
  4. Serve immediately and enjoy!

Chef's Tip

Moreton Bay bugs are naturally sweet and delicate, so high heat and quick cooking are essential. Because the bugs are already cooked, the grill should only add light char and caramelisation without drying the meat out. The Sriracha butter brings heat and richness, while fresh lemon keeps the seafood flavour bright, balanced, and restaurant-quality.
