Ingredients

  1. 300 g Moreton Bay bug meat, cooked, shelled and chopped into bite-size pieces
  2. 1½ cups cooked brown rice (approx. 300 g, cooled)
  3. 200 g asparagus, blanched and cut into 3–4 cm pieces
  4. 200 g mixed baby salad greens (e.g., baby spinach, rocket, mesclun mix)
  5. 3 tablespoons flaked almonds, toasted
  6. 1 tablespoon sesame seeds, toasted (optional, for garnish)
  7. 2 tablespoons sesame oil
  8. 1 tablespoon soy sauce
  9. 1 tablespoon rice vinegar
  10. 1 tablespoon lemon juice
  11. 1 teaspoon honey (or sugar)
  12. 1 garlic clove, minced
  13. Salt and freshly ground black pepper, to taste

Method

  1. Prepare the sesame dressing: In a small jar or bowl, whisk together 2 tablespoons of sesame oil, 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of lemon juice, 1 teaspoon of honey, and 1 minced garlic clove until smooth. Season with salt and freshly ground black pepper. Set aside.
  2. Blanch the asparagus: Bring a small saucepan of water to the boil. Add 200 g of asparagus, cut into 3–4 cm pieces, and cook for 1–2 minutes until bright green and tender-crisp. Drain immediately and refresh under cold running water to stop the cooking. Set aside.
  3. Assemble the salad base: In a large mixing bowl, add 1½ cups of cooked brown rice (about 300 g), the blanched asparagus, and 200 g of mixed baby salad greens. Toss gently to combine.
  4. Add the seafood: Fold in 300 g of cooked Moreton Bay bug meat, cut into bite-size pieces, being careful not to break up the chunks.
  5. Dress the salad: Pour the sesame dressing evenly over the salad mixture. Toss lightly with salad servers until all ingredients are coated.
  6. Finish and serve: Sprinkle 3 tablespoons of toasted flaked almonds and 1 tablespoon of toasted sesame seeds over the top. Serve immediately with extra lemon wedges on the side, if desired.
