Ingredients List
- 300g Moreton Bay bug meat, finely chopped
- 200g prawns, peeled, tails chopped
- 20g wood ear mushrooms, soaked, drained, and finely sliced
- 100g rice vermicelli glass noodles, soaked and cut into 3-5 cm strands
- 3 spring onions, finely chopped
- 2 tablespoons fish sauce
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1 small egg yolk (for sealing)
- 18-24 square spring roll pastries (approximately 10cm x 10cm)
- Grapeseed oil (for deep frying or air fryer spray)
- Optional: Caviar and sparkling wine for garnish
- Sweet chili sauce (for dipping)
Steps
- Prepare the sesame dressing by combining all the ingredients in a jar with a screw-top lid. Shake well and set aside until you're ready to use it.
- Cut the Moreton Bay bugs in half lengthwise and carefully remove the meat from the shells. Take out the digestive tract (the grey thread running down the middle of the tail meat). Cover the meat and refrigerate until needed.
- In a large bowl, combine the cooked brown rice, blanched asparagus, and mixed baby salad greens. Pour the dressing over the salad and toss to mix thoroughly.
- To serve, divide the salad mixture between plates, place the bug tails on top, and sprinkle with the toasted flaked almonds. Enjoy immediately.
