Ingredients

  1. 300 g Moreton Bay bug meat, cooked, shelled and chopped into bite-size pieces
  2. 1½ cups cooked brown rice (approx. 300 g, cooled)
  3. 200 g asparagus, blanched and cut into 3–4 cm pieces
  4. 200 g mixed baby salad greens (e.g., baby spinach, rocket, mesclun mix)
  5. 3 tablespoons flaked almonds, toasted
  6. 1 tablespoon sesame seeds, toasted (optional, for garnish)
  7. 2 tablespoons sesame oil
  8. 1 tablespoon soy sauce
  9. 1 tablespoon rice vinegar
  10. 1 tablespoon lemon juice
  11. 1 teaspoon honey (or sugar)
  12. 1 garlic clove, minced
  13. Salt and freshly ground black pepper, to taste

Method

  1. Prepare the sesame dressing: In a small jar or bowl, whisk together 2 tablespoons sesame oil, 1 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 tablespoon lemon juice, 1 teaspoon honey and 1 minced garlic clove until well combined. Season with salt and freshly ground black pepper. Set aside.
  2. Blanch the asparagus: Bring a small saucepan of water to the boil. Add the asparagus and cook for 1–2 minutes until bright green and tender-crisp. Drain immediately and refresh under cold running water. Set aside.
  3. Prepare the Moreton Bay bugs: Remove the cooked Moreton Bay bug meat from the shells and cut into bite-size pieces. Measure approximately 300g of prepared meat and set aside.
  4. Assemble the salad: In a large mixing bowl, combine the cooked brown rice, blanched asparagus and mixed baby salad greens. Toss gently to combine.
  5. Add the seafood: Gently fold the prepared Moreton Bay bug meat through the salad, taking care not to break up the pieces.
  6. Dress the salad: Pour the sesame dressing evenly over the salad and toss lightly until everything is evenly coated.
  7. Finish and serve: Sprinkle the toasted flaked almonds and sesame seeds over the top. Serve immediately.
