  • Delivery Timing: Orders placed before 3pm will be delivered the following day (where available). Orders placed after this time will be delivered the next available day.
  • Free Delivery: Enjoy free delivery for orders over $200. A $20 delivery fee applies to orders under $200.
  • Packaging: All seafood is packed in insulated, temperature-controlled containers and delivered in refrigerated trucks to maintain peak freshness throughout transit.
  • Delivery Area: We deliver within a 60km radius of Menai, NSW, and are expanding our service area to cover Melbourne soon.

Preparation Tips

  • Cleaning: Rinse the oysters under cold water to remove any dirt or debris from the shell. Use a scrub brush if necessary to clean the outer surface.
  • Opening: Carefully use an oyster knife to pry open the shell, inserting the knife at the hinge. Twist gently and run the knife along the shell to detach the muscle, then lift the top shell.
  • Serving raw: For raw oysters, serve immediately on a bed of ice with lemon wedges, mignonette sauce, or Tabasco for added flavour.
  • Grilling: Leave the oysters in the shell and place them on the grill for 5–7 minutes until they open slightly. Remove the top shell, add your choice of butter or sauce, and grill for another 2–3 minutes.
  • Baking: Top oysters with garlic butter, breadcrumbs, or herbs. Preheat the oven to 180°C and bake for 8–10 minutes until cooked through.
  • Flavouring: Pair with lemon, garlic butter, fresh herbs, or a light vinaigrette to highlight their natural briny sweetness.
