Ingredients

  1. Fresh oysters in the half shell – 18 oysters, cleaned (3 per person)
  2. Chorizo sausage – 1 medium, finely diced
  3. Fresh basil leaves – ¼ cup, finely chopped
  4. Green shallot – 1, finely chopped
  5. Garlic – 1 clove, crushed
  6. Olive oil – 3 tablespoons
  7. Balsamic vinegar – 1½ tablespoons
  8. Salt and pepper, to taste
  9. Rock salt or crushed ice, for serving

Method

  1. To prepare the basil dressing, whisk together the olive oil, balsamic vinegar, chopped basil, green shallot, and crushed garlic in a jug until well combined. Taste and season with salt and pepper.
  2. Heat a small non-stick frying pan over medium heat. Add the chopped chorizo and cook, stirring occasionally, for about 3 minutes or until crisp. Remove from heat.
  3. Arrange the Pacific oysters on a large serving platter. Top each oyster with the cooked chorizo and drizzle with the basil dressing. Serve immediately.
