Ingredients List
- Fresh oysters in the half shell – 18 oysters, cleaned (3 per person)
- Chorizo sausage – 1 medium, finely diced
- Fresh basil leaves – ¼ cup, finely chopped
- Green shallot – 1, finely chopped
- Garlic – 1 clove, crushed
- Olive oil – 3 tablespoons
- Balsamic vinegar – 1½ tablespoons
- Salt and pepper, to taste
- Rock salt or crushed ice, for serving
Steps
- To prepare the basil dressing, whisk together the olive oil, balsamic vinegar, chopped basil, green shallot, and crushed garlic in a jug until well combined. Taste and season with salt and pepper.
- Heat a small non-stick frying pan over medium heat. Add the chopped chorizo and cook, stirring occasionally, for about 3 minutes or until crisp. Remove from heat.
