Ingredients

  1. 300g raw prawns, peeled and deveined
  2. 1 small pineapple, peeled, cored, and cut into slices
  3. 1 ripe avocado, diced
  4. 1 small red onion, finely sliced
  5. 1 red chilli, finely chopped (optional)
  6. 1 tablespoon olive oil (for grilling)
  7. Fresh coriander leaves, for garnish
  8. Salt and pepper, to taste
  9. 3 tablespoons olive oil
  10. 2 tablespoons lime juice (about 1 lime)
  11. 1 tablespoon honey
  12. 1 garlic clove, minced
  13. ½ teaspoon ground cumin
  14. Salt and pepper, to taste

Method

  1. Preheat a barbecue grill or chargrill pan over medium-high heat. Grill the pineapple slices for 2-3 minutes on each side or until they are nicely charred.
  2. In a food processor, combine all the dressing ingredients and blend until well mixed and nearly smooth. Adjust the seasoning to taste.
  3. On a serving platter, arrange the cos lettuce leaves. Layer the grilled pineapple, cooked prawns, avocado wedges, and sliced red onion on top. Drizzle the prepared dressing over the salad to serve.
