Ingredients List

  1. 500g penne pasta
  2. 300g cauliflower florets
  3. 2 tbsp olive oi
  4. 1 small onion, finely chopped
  5. 2 cloves garlic, minced
  6. 500g fresh salmon (boneless & skinless), cut into chunks
  7. 2 tbsp plain flour
  8. 2 cups milk
  9. ¾ cup thickened cream
  10. 1½ cups grated cheddar cheese
  11. ½ cup grated parmesan cheese
  12. 1 tbsp Dijon mustard (optional but tasty)
  13. ¼ tsp ground black pepper
  14. Salt, to taste
  15. 2 tbsp fresh parsley, chopped (plus extra for garnish)
  16. ½ cup breadcrumbs (for topping)

Steps

  1. Preheat the oven to 200°C/180°C fan-forced. Cook the penne in a large saucepan of boiling water for 7 minutes, adding the cauliflower for the last 3 minutes of cooking. Drain well.
  2. Meanwhile, heat the oil in a large, deep frying pan over medium heat. Add the onion and cook, stirring, for 5 minutes or until soft. Add the garlic and cook, stirring, for 30 seconds. Add the tomatoes and balsamic vinegar. Season with salt and pepper.
  3. Combine the tomato mixture, pasta, cauliflower, salmon mince, and spinach in a 3L (12-cup) baking dish. Dot with ricotta and sprinkle with parmesan. Bake for 15 minutes or until the cheese is melted. Sprinkle with basil leaves and serve hot.
