Ingredients

  1. 500g penne pasta
  2. 300g cauliflower florets
  3. 2 tbsp olive oil
  4. 1 small onion, finely chopped
  5. 2 cloves garlic, minced
  6. 500g fresh salmon (boneless & skinless), cut into chunks
  7. 2 tbsp plain flour
  8. 2 cups milk
  9. ¾ cup thickened cream
  10. 1½ cups grated cheddar cheese
  11. ½ cup grated parmesan cheese
  12. 1 tbsp Dijon mustard (optional but tasty)
  13. ¼ tsp ground black pepper
  14. Salt, to taste
  15. 2 tbsp fresh parsley, chopped (plus extra for garnish)
  16. ½ cup breadcrumbs (for topping)

Method

  1. Preheat the oven to 200°C (180°C fan-forced). Cook the penne in a large saucepan of boiling water according to the packet instructions, adding the cauliflower for the final 3 minutes. Drain well and set aside.
  2. Heat 1 tablespoon olive oil in a large, deep frying pan over medium heat. Add the onion and cook for about 5 minutes until softened. Add the garlic and cook for a further 30 seconds.
  3. Add the salmon chunks and cook gently for 2–3 minutes, turning occasionally, until lightly coloured but not completely cooked through. Transfer the salmon to a plate and set aside.
  4. Add the remaining 1 tablespoon olive oil to the pan. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, followed by the cream, until smooth. Cook gently, stirring, until the sauce has thickened.
  5. Reduce the heat to low. Stir in 1 cup cheddar, ¼ cup parmesan and the Dijon mustard, if using. Season with black pepper and salt to taste. Stir until the cheese has melted.
  6. Add the drained penne, cauliflower, salmon and chopped parsley to the sauce. Fold together gently, then transfer to a large baking dish.
  7. Combine the breadcrumbs with the remaining ½ cup cheddar and ¼ cup parmesan. Sprinkle evenly over the pasta.
  8. Bake for 15–20 minutes, or until bubbling and golden on top. Garnish with extra fresh parsley and serve hot.
