Ingredients

  1. Fresh lobster meat – approx. 600g, cooked and chopped into 1cm pieces
  2. ½ cup good-quality mayonnaise
  3. 2–3 finger limes, pearls scooped out
  4. 1 tbsp lemon juice (adjust to taste)
  5. Salt and pepper, to taste
  6. 4 brioche rolls or hotdog-style buns
  7. 2 tbsp unsalted butter, melted (for toasting rolls)
  8. Fresh chives, finely chopped (optional, for garnish)
  9. Butter lettuce leaves (optional, for lining rolls)

Method

  1. Remove the lobster meat from the shell and cut it into 1cm pieces. In a large bowl, combine the lobster with mayonnaise and finger lime pearls. Season with salt and pepper, and adjust the acidity with lemon juice to taste.
  2. Brush the inside of the brioche rolls with melted butter. Toast the bread, cut-sides down, in a frying pan over medium heat for 1-2 minutes, or until golden brown.
  3. Fill the toasted rolls with butter lettuce and the lobster mixture. Sprinkle with extra finger lime pearls and serve immediately.
