Ingredients

  1. 4 ling portions (about 150–180g each)
  2. 800g potatoes, thinly sliced
  3. 3 tablespoons olive oil (divided)
  4. 1 onion, sliced
  5. 100g pancetta, diced
  6. 200g mushrooms, sliced
  7. 2 teaspoons fresh thyme, chopped
  8. Salt and pepper, to taste

Method

  1. Preheat the oven to 220°C. Place the potatoes into a large roasting pan. Add 2 tablespoons of oil, onion, pancetta, mushrooms, thyme, and salt and pepper. Toss to combine and roast for 20 minutes.
  2. Rub the remaining 1 tablespoon of oil over both sides of the fish portions. Season with salt and pepper. Place on top of the potato mixture. Bake the fish and vegetables for a further 10 minutes, or until the fish flakes when tested with a fork and the vegetables are cooked through.
  3. Remove from the oven. Cover loosely with foil and stand for 5 minutes before serving.
