Ingredients List

  1. 200g fresh whitebait
  2. 100g plain flour
  3. 50g rice flour
  4. 1 teaspoon baking powder
  5. Salt (to taste)
  6. Pepper (to taste)
  7. 1 egg (lightly beaten)
  8. 100ml cold water
  9. Vegetable oil (for frying)
  10. Lemon wedges (for serving)
  11. Fresh parsley (for garnish, optional)

Steps

  1. In a bowl, mix the plain flour, rice flour, baking powder, salt, and pepper.
  2. Add the lightly beaten egg and cold water to the dry ingredients, whisking until a smooth batter forms.
  3. Carefully fold the fresh whitebait into the batter, ensuring they are evenly coated.
  4. Heat vegetable oil in a frying pan over medium-high heat. Test the oil by dropping in a small amount of batter – it should sizzle.
