Ingredients List

  1. 500g sashimi-grade tuna (diced into 5mm cubes)
  2. 500g watermelon (diced into 5mm cubes)
  3. 1/4 cup lime juice
  4. 1 small red chilli (finely chopped, or chilli flakes to taste)
  5. 1 small red onion (finely chopped)
  6. 6 witlof leaves (trimmed and separated)
  7. 2 tablespoons olive oil
  8. 2 tablespoons chives (chopped)
  9. 1/4 cup baby coriander leaves (for garnish)

Steps

  1. Dice the tuna and watermelon into small 5mm cubes, keeping them in separate bowls. Drain the watermelon and mix it with the tuna, lime juice, chilli, and onion. Cover the mixture and refrigerate for 5-15 minutes to enhance the flavours.
  2. Prepare the witlof by trimming the bases and arranging the leaves on a serving platter. Drain excess marinating liquid from the tuna mixture, then stir in olive oil and chives. Spoon the mixture into
    the witlof leaves and garnish with baby coriander leaves. Serve immediately.
