Ingredients List

  1. 300–400g pasta (spaghetti, linguine, or your choice)
  2. 2 tbsp olive oil
  3. 3–4 cloves garlic, minced
  4. 1 small onion, finely chopped
  5. 400g canned crushed tomatoes
  6. 1 tbsp tomato paste
  7. 1 tsp sugar (optional, to balance acidity)
  8. 200g mussels (pre-cooked and shelled)
  9. Salt and freshly ground black pepper, to taste
  10. Chilli flakes (optional, to taste)
  11. Fresh parsley, chopped (for garnish)
  12. Grated Parmesan cheese, to serve (optional

Steps

  1. Clean and debeard the fresh mussels, discarding any that remain open after a gentle tap.
  2. Cook the pasta according to the package instructions. Drain and set aside.
  3. Heat olive oil in a large, deep pan over medium heat. Add garlic and onion, cooking until softened and fragrant.
  4. Pour in the white wine and bring to a simmer. Add the mussels, cover the pan, and cook for 4-5 minutes, shaking the pan occasionally, until the mussels open. Discard any that remain closed.
  5. Remove the mussels from the pan and set aside. Leave the liquid in the pan.
  6. Add diced tomatoes and chilli flakes (if using) to the pan. Simmer for 5-7 minutes until the sauce thickens slightly. Season with salt and black pepper.
  7. Return the mussels to the pan and toss gently in the tomato sauce.
  8. Combine the cooked pasta with the sauce, mixing well to coat evenly.
  9. Serve hot, garnished with fresh parsley and grated Parmesan cheese.
