Ingredients

  1. 800g Tiger Prawns, peeled and deveined
  2. 1 ripe avocado, sliced
  3. 4 radishes, thinly sliced
  4. 2 tbsp rice vinegar
  5. 2 spring onions, thinly sliced
  6. 8 rice paper sheets or lettuce leaves (for wrapping)
  7. 1 small carrot, julienned
  8. 1 small cucumber, julienned
  9. Fresh mint and coriander leaves (optional)
  10. 1 tbsp soy sauce (for dipping)
  11. 1 tsp sesame oil (optional)
  12. Salt and freshly ground black pepper, to taste

Method

  1. Combine the radish and vinegar in a small bowl. Allow to soak for 30 minutes, then drain thoroughly.
  2. While the radish soaks, place the spring onion in a bowl of iced water. Let sit for 10 minutes or until the pieces curl, then drain.
  3. In a separate bowl, mix the mayonnaise with horseradish cream and dill (if desired). Spread the mixture over the cut sides of the rolls. Layer with lettuce, radish, avocado, prawns, and spring onion curls. Finish with a sprinkle of pepper.
