- blue mackerel fillets – approx. 600g (blue mackerel, skin on)
- 2 tbsp Thai red curry paste
- 1 tbsp caster sugar
- ½ cup coconut milk
- Salt and pepper, to taste
- 1 medium cucumber, sliced into long strips and cut into matchsticks
- 1 cup cherry tomatoes, halved
- Fresh mint leaves, torn (for garnish)
- 1 tbsp fish sauce
- 1 tbsp lime juice (plus extra for serving)
- Lime cheeks (for serving)
Steps
- Preheat the grill to high and lightly oil a large baking tray.
- Rinse the blue mackerel under cold water and pat dry with paper towels. In a bowl, mix together the Thai red curry paste, caster sugar, coconut milk, and season with salt and pepper.
- Place the mackerel on the prepared baking tray and spread the curry mixture evenly over the fish. Place the tray under the hot grill for 5 minutes, then carefully turn the fish. Grill for an additional 6-10 minutes, or until the skin becomes crackled and scorched, and the flesh is cooked through.
