Ingredients

  1. blue mackerel fillets – approx. 600g (blue mackerel, skin on)
  2. 2 tbsp Thai red curry paste
  3. 1 tbsp caster sugar
  4. ½ cup coconut milk
  5. Salt and pepper, to taste
  6. 1 medium cucumber, sliced into long strips and cut into matchsticks
  7. 1 cup cherry tomatoes, halved
  8. Fresh mint leaves, torn (for garnish)
  9. 1 tbsp fish sauce
  10. 1 tbsp lime juice (plus extra for serving)
  11. Lime cheeks (for serving)

Method

  1. Preheat the grill to high and lightly oil a large baking tray.
  2. Rinse the blue mackerel under cold water and pat dry with paper towels. In a bowl, mix together the Thai red curry paste, caster sugar, coconut milk, and season with salt and pepper.
  3. Place the mackerel on the prepared baking tray and spread the curry mixture evenly over the fish. Place the tray under the hot grill for 5 minutes, then carefully turn the fish. Grill for an additional 6-10 minutes, or until the skin becomes crackled and scorched, and the flesh is cooked through.
  4. Meanwhile, using a vegetable peeler, slice the cucumber into long strips and then cut those strips into matchsticks. Toss the cucumber, cherry tomatoes, and mint leaves together with fish sauce, lime juice, and season with salt and pepper. Serve thegrilled mackerel alongside the cucumber salad and lime cheeks.
