Ingredients

  1. 200g fresh king salmon fillet (or smoked salmon)
  2. 1 large leek, thinly sliced
  3. 2 medium potatoes, peeled and thinly sliced
  4. 6 large eggs
  5. 1/4 cup cream (optional, for extra richness)
  6. 2 tbsp fresh dill, chopped (plus extra to garnish)
  7. Olive oil spray
  8. Salt and pepper, to taste

Method

  1. Combine the salmon and teriyaki marinade in a bowl. Place in the fridge for 15 minutes to develop the flavors.
  2. Cook the edamame or broad beans in a large saucepan of boiling water following packet directions. Drain and place in a bowl.
  3. Heat olive oil in a large non-stick frying pan over medium heat. Cook the salmon, turning, for 4-5 minutes or until golden and cooked to your liking.
  4. Meanwhile, heat the brown rice following packet directions. Place the salad mix from the poke slaw kit in a large bowl. Add half of the dressing from the salad kit and toss to combine.
  5. Divide the rice among serving bowls. Top with the salad mixture,edamame or broad beans, salmon, cucumber, spring onion, and pickled ginger. Sprinkle with sesame seeds and drizzle with the remaining
    dressing.
