Ingredients

  1. 500g salt and pepper squid (fresh or pre-cooked)
  2. 2 tablespoons vegetable oil
  3. 2 cloves garlic (minced)
  4. 2 red chillies (sliced)
  5. 4 shallots (sliced)
  6. 2 tablespoons soy sauce
  7. 1 tablespoon oyster sauce
  8. 1 tablespoon sesame oil
  9. 1 teaspoon sugar
  10. Fresh coriander leaves (for garnish)
  11. Steamed rice (optional, for serving)

Method

  1. Prepare the salt and pepper squid by patting it dry with paper towels if using fresh. If using pre-made, cook according to package instructions and set aside.
  2. Heat the vegetable oil in a large wok or skillet over medium-high heat until hot.
  3. Add the minced garlic, sliced chillies, and shallots to the wok. Stir-fry for 1-2 minutes until fragrant and slightly softened.
  4. Increase the heat to high and add the cooked salt and pepper squid to the wok. Toss everything together for about 1 minute.
  5. Stir in the soy sauce, oyster sauce, sesame oil, and sugar. Mix well to coat the squid evenly with the sauces.
  6. Continue stir-frying for another 2-3 minutes, ensuring the squid is heated through and the flavours are combined.
  7. Remove the wok from heat and garnish the dish with freshly chopped coriander leaves.
  8. Serve hot with steamed rice, if desired, and enjoy your stir-fried salt and pepper squid with chilli and shallots!

Chef's Tip

For tender and flavourful salt and pepper squid, keep the wok extremely hot and stir-fry quickly so the squid stays soft while absorbing the smoky chilli and shallot flavours. Overcooking can make squid tough, so the goal is fast cooking with plenty of heat and movement in the pan. The combination of soy, oyster sauce, sesame oil, and fresh chilli creates a rich savoury glaze that perfectly coats the crispy squid. Serve immediately while the squid is hot and the shallots are still fragrant and vibrant.
