Ingredients List
- 4 barramundi portions (about 150–180g each)
- 2 tablespoons chopped fresh dill
- 1 teaspoon fennel seeds
- 2 tablespoons olive oil
- Juice and zest of 1 lemon
- 1 bunch silverbeet, stems removed and leaves shredded
- 1 medium beetroot, grated
- 1 x 400g can lentils, drained and rinsed
- 1/2 red onion, thinly sliced
- 100g fetta, crumbled
- 1/4 cup walnuts, roughly chopped
- Salt and pepper, to taste
Steps
- Place the barramundi, dill, fennel seeds, half the oil, half the lemon juice, and half the lemon zest in a large bowl. Season. Toss to combine.
- Combine the silverbeet, beetroot, lentils, onion, fetta,
walnuts, and remaining lemon zest in a large bowl. Drizzle with the remaining oil and lemon juice. Season. Gently toss to combine. - Heat a large frying pan over medium-high heat. Add the barramundi and cook for 2-3 minutes on each side or until golden brown and the flesh flakes easily when gently tested with a fork. Transfer to a plate.
- Divide the silverbeet mixture and barramundi among serving plates.
