  1. 6 scallops, cleaned and patted dry
  2. 1 tablespoon olive oil (for cooking the peperonata)
  3. 1/2 small red onion, thinly sliced
  4. 1/2 red capsicum (bell pepper), thinly sliced
  5. 1/2 yellow capsicum (bell pepper), thinly sliced
  6. 1 small garlic clove, minced
  7. 1 teaspoon red wine vinegar
  8. Salt and pepper, to taste
